Steel is a material marketed in a large variety of types: it is widely used in the kitchen because it is resistant and easy to manage, but it does not excel in distributing heat evenly. To overcome this single defect, the steel instruments created for Artusi 2.0 are equipped with a special three-layer encapsulated base, which improves thermal diffusion making it more uniform.
Stainless steel pans are especially used for cooking in which the heat is transmitted by the water, such as boiling.
