Gnocchi with broccoli

INGREDIENTS

500 g broccoli
400 g re-milled semolina
dried chilli to taste
to taste bread for croutons
nuts to taste
to taste oil, salt, pepper

Method

STEP 01
Clean the broccoli, cut them into tufts and cook them in salted water.

STEP 02
Thoroughly clean the part of the stem, cut it into thin strips and sauté it in a pan with a drizzle of oil and a little garlic.

STEP 03
As soon as the broccoli is ready, blend it. Then add the flour, obtaining a soft and non-sticky dough.
STEP 04
Divide the dough into four parts. Create a roll and then cut it into small pieces, thus making small gnocchi to be cooked in boiling salted water.

STEP 05
Blend the sautéed and cooked stem with some walnuts, chilli pepper, salt and oil and, if necessary, with a little cooking water.

STEP 06
Heat the pesto in a pan and add it to the gnocchi.
