Creamy Asparagus and Pea Soup

INGREDIENTS

500g Asparagus
200g Peas
1 Potato
¼ Onion
to taste Mixed seeds (sunflower, pumpkin, flax)
to taste Oil, salt, pepper (sunflower, pumpkin, flax)

Method

STEP 01
In a saucepan, heat a drizzle of extra virgin olive oil and sauté the chopped onion until soft.

STEP 02
Add the diced potato and chopped asparagus. Let them cook for a few minutes to enhance the flavor.
STEP 03
Add the peas, season with salt, and cover with just enough water to submerge the vegetables. Cook over medium heat for about 25 minutes, until the vegetables are tender.

STEP 04
Blend everything with an immersion blender until smooth and creamy. Serve the hot soup in bowls, topping with some reserved vegetables, a handful of mixed seeds, a grind of black pepper, and a drizzle of raw extra virgin olive oil
