From a nutritional viewpoint, onions are low in calories (26 kcal/100 g) and generally speaking, nutrients, since they only contain trace elements (sulphur, iron, potassium, magnesium, fluorine, calcium, manganese and phosphorous) and vitamins (A, B complex, C and E). However, when we eat onions we give our bodies “sulphur compounds” that have the capacity to reduce our blood sugar levels (anti-diabetic action) and to regulate our triglycerides (fats in circulation) and cholesterol, which helps prevent hypertension, atherosclerosis and other cardiovascular diseases.
